Meals
at the Resort are an experience to be remembered. Many of the
set meals are derived from local recipes although you can expect to see
international fusion dishes as Ian has traveled extensively throughout
Asia, Europe and Latin America and enjoys blending the many flavors and
styles he has discovered during his travels. Many of the dishes feature fresh
local delicacies such as prawns, oysters, octopus, clams, salmon, cod,
snapper, crab, shark, berries, mushrooms and fruits. In fact if you
purchase a local fishing license,
you may find yourself as an active participant in the process of
harvesting what goes into the pot for dinner! Meals at Sevilla Island
Resort bring a whole new meaning to the term "fresh ingredients".
  
Breakfasts usually feature fresh baking such as muffins, cinnamon
buns, scones and breads which provides the opportunity to sample many
of the locally produced jams and jellies such as salal berry, blackberry,
pear, saskatoon berry, peach etc. We believe a hearty breakfast is an
important start to
the day so bacon, sausage, omelets, french toast, pancakes,
and variety of quiches are all typical breakfast fare. Fresh ground
coffee, juices and a selection of teas will ensure that you are ready to
engage the day’s activities. The dining room looks over Lund Harbor and up
Georgia Strait so every meal is a sightseeing opportunity. On mornings
with low tides it is common to see great blue herons feeding in the tidal
pools in front of the Resort. There are singing trees both on the island
and across the bay so it is not unusual to hear bald eagles singing in the
morning. You may also see a seal munching on a salmon while gulls swoop
down for scraps, a kingfisher diving for his breakfast or any number of
migratory ducks, geese and cormorants.
Lunches
depend on the activity of the day. One thing we promise is that you will
be pleasantly surprised. Just because you have kayaked to an island in the
middle of Desolation Sound doesn't mean that you shouldn't expect our
guides to serve up a meal such as poached chicken breasts with roasted
walnuts and a mandarin Thai salad. If you are out on your own for the day we will provide a range of
boxed lunches with sweet and savory
snacks to include in your daypacks.
Dinners at the
Resort are meant to be a
highlight of the day which given what you will be doing each day provides
Ian with a significant culinary challenge. What will it take to compete
with paddling around remote islands, hiking to panoramic lookouts,
wandering along isolated beaches or cruising through Desolation Sound
Marine Park? Perhaps a Grand Marnier Prawn Bisque followed by Sevilla
Island Seafood Boats (roasted squash stuffed with salmon, scallops, crabs
and prawns)? Maybe BBQ'd Steak and Prawns with roasted mushrooms and peppers? Or perhaps Salmon Wellington with a mushroom/sherry
sauce accompanied by a sweet potato soufflé and candied carrots? You can
be the judge on if the meal makes it to the days highlights list.
No
dinner would be complete without dessert and after dinner drinks. Served
either in the dining room, or on one of the decks enjoying the sunset,
this is an excellent way to end the day. Fresh fruit pies, flans,
cheesecakes or chocolate fondue are but a few of the treats you can expect
to cap off the day.
Needless to say, though you will have the
opportunity to burn a few calories off each day don't plan on loosing any
weight during your visit. Please make sure you let us know about of any
food allergies/preferences when you make your reservation to ensure that Ian can accommodate your special
needs.
